This is a lossy-to-lossy transcode: AAC is decoded to PCM first, then re-encoded as MP3. Every generation of lossy encoding introduces additional quantization artifacts. At 192 kbps MP3 the audible degradation from a 256 kbps AAC source is subtle for most listeners on consumer hardware, but perceptible artifacts can accumulate in the 2–8 kHz presence range and in transient-heavy material like percussion. The MP3 format does not support channel counts above two without the rarely-used and poorly-supported Surround extension, so Dolby AC-3 tracks with 5.1 channels will be downmixed to stereo during decode. ID3 tags (title, artist, album, track number) can be carried forward if the conversion tool reads the iTunes metadata atoms from the M4V container, but embedded cover art depends on the tool and is sometimes dropped.
